Hi, I’m Aishwarya!

I’m a global nomad, a lifelong vegetarian, and a hiking enthusiast who’s always on the lookout for delicious, nourishing meals. My love for food has taken me across the world, where I’ve collected recipes, techniques, and flavors that I’m now excited to share in a simplified and accessible form. The dishes on this blog are (mostly) packed with plant-based goodness. So, I beckon, Welcome to Milieu!

Although my love for food has always been strong, I only truly learned to cook as an adult. So, I completely understand how overwhelming new ingredients and techniques can feel. But if I could master it, trust me; you can too!

Why Milieu?

Sustainable eating shouldn’t feel like a chore. I want to show you how vibrant, satisfying, and exciting vegetarian and vegan food can be. Here we are to celebrate the beauty of plants and fungi in ways that leave you feeling nourished, fancy, and fully satisfied.

Sustainable eating is not just plant-based. Another aspect I am fascinated with, is zero wastage. While we may all have had unavoidable circumstances where we are forced to waste some portions of foods, my aim is to ensure that this wastage is minimised.

A lot of food wastage stems from 3 things:

  1. I don’t know what to do with the random ingredients in my refrigerator: A good portion of the recipes are designed to use all the randon ingredients in your fridge. Most recipes also contain tons of options and substitutions, making it easy to swap ingredients for those already in your fridge. No more extra shopping just to eat something fancy!
  1. I made something I don’t like (or did not turn out the way it was supposed to) so ended up wasting it, albeit filled with guilt: Make my simple, healthy and tasty recipes and I guarantee that you would eat it all up. For the best results, I have included detailed instructions, customisations, taste adaptations and more!
  1. I made too much food, stored inappropriately or ignored an ingredient; now the food item is spoiled and not safe for consumption: Every blog post contains notes on storing foods, provide guides on what lasts and, the best practices to store it

What’s in here for you?

I’ll focus on plant-based and lacto-vegetarian dishes that are easy to put together, with healthy twists, wherever possible. I believe that great food doesn’t need to be overloaded with calories, sugar, or processed ingredients. Instead, it should fuel us, physically and mentally, and allow us to take on the world!

Together, we’ll explore the fundamentals of good cooking, experiment with exciting flavors, and most importantly, have fun doing it. I can’t wait to build this Milieu community with you and make living better, one meal at a time, an effortless reality.
